Quinoa salad

Ingredients:

  • 1/2 cup of quinoa (white or red)
  • 1 cup of water
  • 1/2 cup of corn kernels
  • 1/4 cup of halved cherry tomatoes
  • 1/2 avocado, sliced into chunks
  • 4 tbsp lemon juice (lemon juice can be substituted for lime juice).

  3. Cover with a lid and soften for 15 minutes or until water is absorbed.
  4. Remove from heat and let sit for 10 minutes.
  5. Fluff with a fork.
  6. Take a large bowl and combine cooked quinoa, corn kernels, avocados, cherry tomatoes, parsley, lemon juice and olive oil; sprinkle salt and pepper, if desired. Toss well to combine.
